    Summer Salads

    Cucumber Salad

    Ingredients:
    Sour Cream
    White Vinegar
    Sugar
    Onion
    Cucumbers

    -----------------
    Slice cucumbers thin/I peel the skin
    Vidella Onion -- slice according to how much you want to add as an accent to the dish
    Two drops of vinegar
    a dash of sugar
    Depending on the amount of cucumbers, add the sour cream -- coat the cucumbers

    Mix all together and chill for two hours
    Then serve

    You can garnish with:
    parsley
    paparika

    Find something for tomatoes...

    The plants are loaded with flowers and grape tomatoes

    Holy crap Res, ok a tomato salad then:

    slice tomatoes
    cucumbers
    boiled small white potatoes/cool them down
    scallon onions
    parsley
    salt
    pepper
    garlic (don't skimp--use fresh garlic)
    a dash of oregano
    lemon

    Slice all the ingredients
    put together
    mix the light olive oil
    red wine vinegar
    squeeze the lemon (not the whole thing--slice it)
    season

    chill for 1/2 hour & serve

    Other suggestions for the tomotoes/can them or sell them

    What about a bean salad? Or do you got something against beans?

    During a recent road trip, I caught a portion of a cooking show on NPR and the chef was talking about using wrinkled-up older tomatoes. The chef said, like wrinkled grapes, wrinkled tomatoes have a richer, denser flavor that really pops out once sauteed in olive oil and smashed with a fork, add garlic, and basil - pour over pasta. Nice to keep in mind if you can't keep up with robust plant production. Ii couldn't find the piece, but found something pretty close in the link below.

    Wow those look great WNY Res:

    OK chill out I have a bean dish for you:

    Ingredients:
    green beans (or) add yellow beans too
    2 tbs olive oil
    basil
    rosemary
    1 medium bell pepper, slice thin
    3 tbs. fresh orange juice
    1 tsp. finely grated orange --zest
    1/2 balsamic vinegar
    2 cloves of garlic (diced--can be optional)
    3 cups of light packed fresh spinach (optional)
    sea salt
    ground pepper


    1 st boil the veges a bit in boiling water for 3 - 5 minutes
    Heat the oil in a saute' pan
    saute' the garlic
    add your vegetables & rest of the juice, spices

    saute', simmer until it reaches the texture stage you like.

    Optional
    You can add almonds
    oregano
    parm cheese

    Beet Salad

    I think beets are one of the most delicious ingredients ever introduced in a salad.

    Dice up your beets (fresh chilled//or if you prefer to save time canned beets will do)
    Blueberries
    mandarin oranges
    red onions sliced thin and diced
    pecans (or a nut that you prefer)


    Arugula
    lettuce--pretty much whatever leaf lettuce you prefer
    small tomatoes

    crushed black pepper
    salt
    dash of sugar
    basil

    balsamic
    olive oil
    a hint of of lemon
